Valentine Peanut Butter Chex Mix

I wanted to make something to give away for Valentine’s Day and what better than Chex Mix? So I adapted this recipe for Valentine Peanut Butter Chex Mix from Food.com.

Here are the ingredients: Rice Chex, peanut butter, olive oil, white chocolate chips, powdered sugar, sprinkles and M&Ms. Sorry for the blurriness of the picture – I usually snap 2, but I guess I was in a hurry.

In large bowl, add the cereal.  Set aside.

In small microwavable bowl, add the peanut butter, olive oil (or vegetable oil) and white chocolate chips.

Heat uncovered on high about 2 minutes, stirring after every 30 seconds, until melted and smooth (remove when completely smooth and melted).

Pour melted peanut butter mixture over cereal, stirring until consistently coated.

Add the half of the powdered sugar to a gallon zip-top bag.

Add half of the coated cereal to the gallon zip-top bag.

Seal the bag and shake it up until well coated.

Spread it out to cool on parchment, waxed paper or foil. Cool at least 15 minutes.  Repeat with the other half of the powdered sugar and coated cereal.

Once everything is cooled, add the sprinkles and M&Ms and stir about.

  • 1 tablespoon olive oil

  • 3/4 cups M&M's plain chocolate candy (red, white, and pink)
  • 1/2 cup candy sprinkles (red, white, and pink)

Directions

Step 1 In large bowl, add the cereal. Set aside.
Step 2 In small microwavable bowl, add the peanut butter, olive oil (or vegetable oil) and white chocolate chips. Heat uncovered on high about 2 minutes, stirring after every 30 seconds, until melted and smooth (remove when completely smooth and melted).
Step 3 Pour melted peanut butter mixture over cereal, stirring until consistently coated.
Step 4 Add the half of the powdered sugar to a gallon zip-top bag. Add half of the coated cereal to the gallon zip-top bag. Seal the bag and shake it up until well coated. Spread it out to cool on parchment, waxed paper or foil. Cool at least 15 minutes. Repeat with the other half of the powdered sugar and coated cereal.
Step 5 Once everything is cooled, add the sprinkles and M&Ms and stir about. Serve in a serving bowl or give away in cute bags/boxes for gifts. Store the Chex Mix in an airtight container.
