Healthier Brownies (Gluten-Free, Dairy-Free, Refined Sugar-Free)

I recently started seeing a homeopathic doctor and she put me on a non-permanent diet of NO WHEAT, NO DAIRY, and NO REFINED SUGAR while I’m going through a liver cleanse. At first I was like…”What the heck am I going to eat”! Keep in mind I LOVE sweets. Love them! Well needless to say I like a challenge, especially when it comes to food preparation. I’ve been doing just fine. I’m making cookies and treats…and eating them daily (several) and losing a bit of weight without exercising. Whatever I’m doing is doing well for my body. I may try to continue to limit even after my doctor gives me permission to eat them again. I only miss good bread, good pizza and a good hamburger. Other than that I’m not missing much. I will continue to try to master these 3 favorites, however.

Today my self-challenge was to make the best gluten-free, dairy-free, refined sugar-free brownies. And I succeeded at that with these Healthier Brownies. My husband, a HUGE skeptic on anything even remotely healthy, said they taste like regular brownies. That confirmed my thought that this Healthier Brownie recipe is a keeper! It made me so very happy 🙂

One thing is for certain, I am super picky. So anything I make MUST taste very, very close to the real thing (85% is my absolute minimum). If not, it’s trash-bound. I am very serious about that. So you can rest assure this Healthier Brownies recipe is dang good!

Here are the ingredients: Raw Sugar, Honey, Coconut Oil, Dairy Free Butter, Vanilla Stevia Drops, Sea Salt, Vanilla Extract, Unsweetened Cocoa Powder, Eggs, Avocado, Gluten Free Flour, Baking Powder, Dairy Free Mini Chocolate Chips and Walnuts. All of these are healthy…all of them!

Preheat the oven to 350°F (Oven Temperature Conversion Chart). Grease an 8″ square baking or 10×7 small bar pan (I lined mine with a foil sling and then sprayed with cooking spray).

In a microwave safe bowl, place the raw sugar, honey, coconut oil, dairy free butter and salt. Microwave in 30-second intervals for 60-90 seconds. Alternatively you can heat in a saucepan over medium heat on the stovetop. Cook until the oil and butter melts and the mixture lightens in color. This helps melt the sugar to give the brownies a shiny crust.

Add the mashed avocado, stevia, vanilla extract and unsweetened cocoa powder to the bowl and whisk to combine. Then add the eggs one at a time and whisk until shiny.

Switch from a whisk to a rubber scraper and fold in the flour and baking powder with a until just combined. Fold in the chips and/or nuts, if you’re using them.

Pour the brownie batter into the prepared pan, spreading it to meet the edges.

Bake the brownies at 350°F (Oven Temperature Conversion Chart) for 18-21 minutes (small bar/brownie pan will take 15-18 min – mine took 15 exactly), until the top is set. Begin testing with a cake tester or toothpick inserted at the earliest time. You simply can’t test too early; do not over-bake.

Remove from the oven and cool for about 15 minutes before cutting. Once the brownies are cool, cover tightly with plastic.

Ingredients

  • 3/4 cups ground raw sugar (grind in blender or food processor) (you may substitute granulated or brown sugar)
  • 2 tablespoons honey
  • 1/4 cup coconut oil (you may substitute regular butter)
  • 1/4 cup dairy free butter (you may substitute regular butter)
  • 1/2 teaspoon sea salt
  • 1/4 mashed avocado (mash well so no chunks remain)
  • 2-3 drops stevia liquid (you may substitute stevia powder)
  • 1 teaspoon gluten-free vanilla extract
  • 3/4 cups unsweetened dutch-process cocoa or baking cocoa
  • 3 Large eggs
  • 3/4 cups all-purpose gluten-free flour (you may substitute regular all-purpose flour)
  • 1 teaspoon baking powder
  • 1/4 cup dairy free mini chocolate chip (you may substitute regular mini-chocolate chips)
  • 1/2 cup chopped nuts (I used walnuts) (any nuts will work fine)
