Dawn & Don's Meat & Potato Taco Meat

Do I ever have a fantastic recipe for you to try – Dawn & Don’s Meat & Potato Taco Meat!  We have a great family friend that is EXTRAORDINARILY good at preparing Mexican food.  When I got married to my husband Joel and we started going up to the Osland cabin I heard all the time about Dawn’s Tacos (Don is Dawn’s husband). They all raved about it. Once I had them for myself, I knew.  Dawn puts something in them that I had never thought to add – finely diced potatoes. She also only uses about 1/2 a packet of taco seasoning. The combination is brilliant with ground beef. I also add in a few other ingredients I’m not sure she adds, but the foundation of her recipe still stands. It’s soooo good!  Top with your favorite taco fixings for an amazing home cooked Mexican feast! You won’t be disappointed.

SLOW COOKER REFRIED BEANS

The title of this recipe is a little deceiving since the beans are NOT fried at all.  One thing for certain, these slow-cooker re-fried beans are not only easy, but they are bueno dang (translation: dang good)!  They make a great addition to any Mexican meal – including a nice plate of nachos. I even add them to my taco meat for exceptional flavor.  All they take is a just a little planning ahead and you’ll have an amazing pot of re-fried beans within a few hours.

FRESH SPICY TOMATO SALSA

Fresh Hot Salsa

For this Fresh Spicy Tomato Salsa, you can add any other fresh ingredients you like – green or red peppers, other hot peppers, garlic, etc. You can add whatever you like as long as it’s fresh.  After you’ve had this Fresh Spicy Tomato Salsa vs. salsa from the jar, you’ll know what I mean. It’s extraordinarily fresh. If you can do basics like chop up veggies, you must make this recipe.

LIME MARGARITA SQUARES

These Lime Margarita Squares have a distinct lime flavor much like a drinkable Margarita. They are tart and slightly sweet with a buttery crumb crust. Topped with powdered sugar they are perfection!
