Fresh Spicy Tomato Salsa

We had “taco night” the other night and we made this amazing Fresh Spicy Tomato Salsa. It was my husband’s idea to make it so he had to help me chop (hee-hee!)  You can add any other fresh ingredients you like – green or red peppers, other hot peppers, garlic, etc. You can add whatever you like as long as it’s fresh.

After you’ve had this Fresh Spicy Tomato Salsa vs. salsa from the jar, you’ll know what I mean. It’s extraordinarily fresh. If you can do basics like chop up veggies, you must make this recipe. I will walk you through the fast and easy steps.

Fresh Spicy Tomato Salsa

Here are the basic ingredients (again, add any other fresh ingredients you wish): Tomato, onion, jalapeno, cilantro, and lime juice.  The only thing not shown is salt and pepper.  You’ll add that to taste right before the final mixing. You can also add in finely chopped garlic, if desired.

Add the finely chopped tomato and onion to a medium size bowl.

To the tomatoes and onion, add the finely diced jalapenos (thank goodness my husband chopped these – my hands break out from them) and the chopped cilantro. I don’t destroy the cilantro by chopping it to bits; I leave a bit of character.

Squeeze in the juice of one lime.

Add in salt and pepper to taste. Advice, start with less and add in very small increments – stirring after each addition.

Ingredients

  • 3 roma tomatoes (finely chopped)
  • 1 Medium white or red onion (finely chopped)
  • 3 jalapeno - ribs and seeds removed (very finely diced)
  • 1/4 cup fresh cilantro (chopped)
  • 1 lime, juiced

Directions

Step 1 In a medium to large bowl, combine the chopped tomatoes, onion, jalapenos and cilantro.
Step 2 Add the juice of one lime.
Step 3 Season to taste with salt and pepper.
Step 4 Stir to combine. After combined, refrigerate for an hour for best results.
Step 5 Store in an airtight container in the refrigerator for a few days (if it lasts that long)
